Job Description

We are seeking a skilled Butcher to join our culinary team. This role is essential to our kitchen operations, providing expertly fabricated meats, poultry, and seafood for our restaurants and banquets. Ideal candidates bring precision, consistency, and a passion for quality ingredients to every cut.

What You’ll Do
  • Fabricate and portion meat, poultry, and seafood to chef specifications, ensuring consistency and minimal waste.

  • Maintain strict food safety and sanitation standards in accordance with HACCP and health department guidelines.

  • Receive and inspect deliveries, rotate inventory, and ensure proper labeling and storage of all products.

  • Collaborate with the culinary team to meet daily production needs for multiple outlets and large‑scale events.

  • Operate and maintain butchering equipment safely, including knives, slicers, grinders, and band saws.

  • Support menu development by providing insight on cuts, yields, and sourcing.

Who You Are
  • Experienced in professional butchering or meat cutting (hotel, resort, or fine dining experience preferred).

  • Skilled with knife handling, portion control, and understanding of primal/sub‑primal cuts.

  • Passionate about quality ingredients, craftsmanship, and continuous learning.

  • Able to work in a fast‑paced environment with a collaborative, positive attitude.
